Sometimes everything does not come out of the oven on time! As hard as you might try or as organized as you might be, sometimes it is just really hard to coordinate several plates arriving to the table at the same time. The solution? Prepare a couple appetizers that people can snack on while they wait! The rest of the solution?! You have so many things to get ready for Thanksgiving dinner, that you want those appetizers to be easy and quick!!
For this easy Zucchini roll appetizer you will need:
Begin by preheating your oven to 390°F (200°C), or according the instructions on the package. Place parchment paper or a silicone mat on your cookie sheet. Start by unrolling your dough. Grate your cheese and zucchini and set aside in bowls. Coat your pizza dough lightly with olive oil. You do not need much because you will be rolling up your dough. Sprinkle lightly with the grated zucchini . Again, do not spread the zucchini too thickly, when you roll the dough there will be plenty of zucchini in each bite. Add your corn on top.
After you have spread out a thin layer of zucchini and corn, sprinkle parmesan cheese and grated pepper jack over the top of the pizza. Make sure you cover it all the way until the edges!
Roll your pizza width wise, so it maintains it’s full length [see photo]. Use the pizza cutter to slice 1/2-1 inch disks. Place the disks flat on the cookie sheet. Bake in the oven according to package instructions, or approximately 10 minutes. Keep an eye on them the first time because the rate at which they cook depends also on the dough that you choose to use.
