Oreo Ice Cream Pie

Today we are celebrating my 15 year old. I can’t believe he is 15. It seems like he was born yesterday. And well, I can’t be old enough to have a 15 year old. I am certain of that. So today I will be eating my Oreo and maybe crying just a little bit.

He is not a big cake fan, so his annual request is for an Oreo Ice Cream Pie. And none of us complain, because it is just oh so yummy!

To make an Oreo ice cream pie, you need to start with the Oreo pie crust recipe. It is so super easy and you only need 2 ingredients! It is beginner level all the way, but tastes amazing!

Start by using your food processor to finely grind about 30 Oreo cookies. You can use whichever flavor you prefer. It works perfectly both with Golden Oreos and with Classic Oreos (avoid the Double stuffed Oreos however). Today we used the Brownie Oreos to make our crust. It was extra chocolately and so delicious! Food processor is recommended for this step, because it is hard to get a smooth crust otherwise.

After you have ground the Oreos into a fine crumb mix, add 5 tablespoons of butter and mix thoroughly to blend the butter throughout the whole crumb mixture. You can do this with a fork or spoon.

Then press your crumb mix into a greased pie pan (greasing it helps with release later). You can use your hands or the base of a cup.

When you have made your crust base, bake it in the oven at 350°F (175°C) for 15 minutes. Allow the crust to cool completely. About 10 minutes before your crust is ready take out your ice cream to allow it to soften slightly. You will need about 18 ounces of ice cream, but you can add more if you prefer, creating a dome shape for your ice cream pie. Spread your ice cream evenly around the pie crust. Top with Oreo crumbs and cover with plastic wrap (cover it well, to avoid freezer burn). Place it in the freezer. Take it out about 20-30 minutes before your are ready to eat it.

I like to add a layer of ganache between the crust and the ice cream. It adds a smooth creamy chocolate layer to your pie. This time we tried Lindt’s new Dark Chocolate Spread. It was delicious!

Don’t have the ice cream flavor you are looking for?? No worries. A quick cheat recipe for making new ice cream flavors: Take a container of vanilla ice cream, allow it to soften for 10 minutes. Then put it in your kitchen aid mixer and add the ingredients you would like to mix in- I added 1/3 cup of peanut butter and Oreo cookies. Mix on low with the beater just until blended. Place back into freezer until you are ready to use it. I have used this cheat recipe for ice cream many times as several classic flavors cannot be found here in Italy. It works great and doesn’t affect the flavor or consistency.
