Caramel Cashew Clusters

The most delish candy for Valentine’s day (or any day?!)?

These caramel cashew clusters! They are melt in your mouth good and easy to make.

Ingredients:

  • Sugar
  • Heavy whipping cream
  • Butter
  • Cashews
  • High quality Chocolate for melting (I used dark, but you can use milk if you prefer)

Begin by making my perfect caramel recipe. Allow to cool slightly.

Next dump all of your cashews into the carmel mixture.

Take out clumps of caramel coated cashews and place them on wax paper to dry. Once you have removed all of your cashews, place the clusters in the refrigerator to harden for at least an hour or overnight.

Melt your chocolate in a microwave safe container at 30 second intervals.

When it is melted, dip one cluster into the chocolate at a time, coat it well with chocolate and remove immediately.

Set on wax paper for the chocolate to harden.

Once you have coated all of your clusters set them in a cool dry place to harden.

Once the chocolate has set put them in a cute bag or box to deliver to your loved one! Or just eat a bunch on family movie night!
