White Chocolate Pecan Cookies

Pecans are one of my all-time favorite nuts. . . so good! So, when I finally found them here in Italy, I had to make a really great cookie to use them in!

Here’s your grocery list:

Ingredients

  • 1 cup room temperature unsalted butter
  • 3/4 cup brown sugar
  • 3/4 cup sugar
  • 1 tablespoon vanilla
  • 2 eggs + 1 egg yolk
  • 2 1/2 cups flour
  • 1 tsp salt
  • 1 tsp baking soda
  • 1/8 tsp baking powder

Instructions:

Measure your room temperature butter into your mixing bowl. Add your sugars. Mix on high speed for 2-4 minutes.

Scrape the sides of your bowl.

Add your eggs and egg yolk. Add your vanilla. Mix on high speed for another 2 minutes.

Scrape the sides of your bowl.

In a separate bowl mix your dry ingredients together: flour, baking soda, baking powder and salt. Whisk lightly with a fork.

Add your dry ingredients to your wet ingredients and mix on low speed just until blended. Do not over mix.

Measure 1 cup of pecans. Chop them into smaller pieces.

Add your 1 cup of white chocolate chips and 1 cup of pecans and mix them in by hand.

Chill your dough for 1 hour or up to 24 hours. Roll into large balls (about 1- 1 1/2 inches) and bake in preheated oven for approximately 7 minutes or until golden brown and still soft in the middle. Allow to cool (and finish setting) on the cookie sheet before moving to a cooling rack or cutting board.
