Homemade Waffles

Light and fluffy, these waffles are perfect topped with fresh fruit or maple syrup!

Waffles are one of my favorite breakfast treats!

I love the crevices in the waffles and how you can fill them easily with syrup, or fruit or powdered sugar.

And I just really love breakfast food! I would eat breakfast for breakfast, lunch and dinner every single day!! Especially if they are covered in fresh fruit- like blueberries, blackberries, strawberries and raspberries. Yum! The best.

So waffles are the perfect Mother’s day treat as well… just in time for berry season. And Mom will be so pleased with this delicious breakfast in bed. And with the chance to stay in bed a little later too.

INGREDIENTS:

  • 2 cups all-purpose Flour
  • 3 teaspoons baking powder
  • 2 Tablespoons sugar
  • 1/2 tsp salt
  • 1 cup milk
  • 1/4 cup plain yogurt
  • 1 tsp vanilla
  • 2 eggs SEPARATED
  • 1/4 cup melted butter

Begin by separating your 2 eggs. Set the yolks aside. Put your egg whites into your electric stand mixer, and mount them on high speed until they are firm, but not dry!

Next measure your dry ingredients into a separate bowl: flour, baking powder, salt, and sugar. Whisk the dry ingredients with a fork. Set aside.

Melt you butter and measure your other wet ingredients. Pour them all into a bowl and whisk with a fork.

Then add the wet ingredients to the dry ingredients and mix well.

Lastly fold the egg whites gently into the batter.

Turn your waffle iron on and grease it well so that the waffles do not stick when you remove them from the iron.

Set them in a bowl in the microwave or in the oven on the lowest temperature to keep them warm until you are ready to eat!
