Perfect Nutella Cookies

These Nutella Cookies are soft and chewy with a delicate flavor. You can’t eat just one!

It’s day 259 stuck in our house… well, not really. It’s only day 11. But we are getting a bit stir crazy! The best part is all of the BAKING!! Like these amazing Nutella cookies. They are a new recipe and I am so glad I was stuck in my house to make them. Because they are soooooo good!

We’ve been trying to brighten up our own world, and the world of those around us too. Yesterday we went up and down our neighborhood and colored giant chalk rainbows on the sidewalk and in the middle of the road. We wrote next to each rainbow #andràtuttobene “everything will be okay”. Our little encouragement and reminder to our neighbors or those who drive through.

Because everything will not be perfect. It already isn’t. We are stuck in our homes and more people get sick every day. But everything WILL BE ok. Because God is for us and He is our refuge in times of trouble.

God is our refuge and strength,
    an ever-present help in trouble.
Therefore we will not fear, though the earth give way

I love that it says an “ever-present” help. He is present. He is with us and gives us strength in times of trouble. So today we are reminding ourselves and our neighbors of this ever-present help and baking some cookies to pass the time and spoil our bored selves a little!

Begin by mixing together your dry ingredients in a small bowl and setting them aside.

Dry ingredients:

  • 1 1/2 cups Flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/8 tsp Baking powder

Next add your butter and Nutella to your electric stand mixer and beat on medium-high until well blended. Scrape the sides of the bowl well.

Add your sugars to the butter mixture and beat on high for another 2-4 minutes, or until fluffy. Scrape the sides of the bowl when done.

Next add your egg and egg yolk to the butter-sugar mixture and beat for another 2 minutes. Lastly, add your vanilla and mix well.

Wet ingredients:

  • 3-4 Tablespoons Nutella
  • 1/2 cup butter
  • 1 Egg + 1 Egg yolk
  • 1 tsp Vanilla extract

Lastly add your dry ingredients to your wet ingredients and mix on low just until combined. Add in your chocolate chips by hand. If you want an even lighter chocolate flavor you can skip the chocolate chips at the point and just have the Nutella flavor in your cookie.

Chill the dough for 1 hour or overnight.

Scoop 1.5 inch balls that sit upright on your pan (do not flatten the dough). Bake in an oven preheated to 375°F for 5-7 minutes. Allow to cool before serving. They are best when warm!
