Nutella Swirl Cookies

Nutella makes everything better.

Well, maybe not everything. But it is so good. And so we can agree that it makes A LOT of things better.

Like these cookies! These cookies are so good. But when you add in the Nutella swirls, then they are out of this world!

Begin by making the cookie dough. While you are working on the dough, put a cup of Nutella in the fridge to chill.

Measure Flour, salt and baking soda into mixing bowl. Mix dry ingredients with whisk or fork until well blended. Make sure you measure the flour by using a spoon to dish it into your cup and the flat edge of a knife to take off the excess, or a kitchen balance if you are measuring in grams.

Set dry ingredients aside.

In a separate mixing bowl for your electric stand mixer: Beat together 1/2 cup room temperature butter (or grated butter if you forgot to leave it out). Add 6 tablespoons of brown sugar and 6 tablespoons or granulated white sugar. Beat on high for 2-4 minutes or until light and fluffy, scraping the sides of the bowl as you go.

In a small bowl separate one egg and keep the yolk. Add your whole egg to the egg yolk and whisk lightly. Add 1 teaspoon of vanilla. Beat until well blended and then add to your butter and sugar mixture and beat for approximately 2 minutes.

Add wet ingredients to dry ingredients and beat on medium-low with an electric mixer just until blended. Do not over mix the batter. Add 3/4 cup of chocolate chips (I used mini dark chocolate chips in this recipe). Stir in the chocolate chips by hand. Cover the bowl with plastic wrap. Refrigerate the dough for at least 1 hour or overnight .

Remove the dough and chilled nutella from the fridge. You can gently swirl the Nutella into the whole dough if you want a quick solution, but I wanted each cookie to have just the right amount of Nutella. . .

So, I formed a cookie dough ball and then gently folded in a teaspoon of chilled Nutella into each ball (the Nutella is much easier to work with if it is chilled. The freezer works great too! Just don’t freeze it solid).

Bake in the oven at 375°F for approximately 5-7 minutes. Be careful not to over bake your cookies. Allow to cool on a cooling rack. Enjoy while warm! The Nutella is extra amazing when the cookies are still warm!
