Chewy Chocolate Cookies

Chewy chocolate cookies are one of our favorite cookies during the holiday season. These cookies are perfect with Nestles Winter chips (dark chocolate and mint chips), andes mint pieces, or mint M&Ms. They are extra chocolately and the mint gives the perfect contrast. You will love this wintery treat. They are perfect with a peppermint hot chocolate snuggled up by the fire.

They are also easy to make!!

To begin you will need to beat 1 cup of butter until creamy and smooth. And your sugars one at a time (3/4 cup brown sugar, 3/4 cup sugar). Beat 2-4 minutes or until creamy and smooth. Be sure to scrape the sides of your bowl as you go. Next add your eggs, one at a time. 2 eggs, plus 1 egg yolk. Beat again for 2 minutes, scraping sides.

In a separate bowl mix together your dry ingredients. Mix 2 1/4 cups of flour, 1 tsp of salt, 1 tsp of baking soda, and 1/4 tsp baking powder in a small bowl with a whisk or a fork. Add 1/3 cup of cocoa to the flour mix. Whisk with fork until blended and then sift into your wet ingredients. Mix just until blended. Do not over mix.

Add your mint chips, andes mints, or M&Ms and stir them in by hand. Chill in the refrigerator for 1 hour or overnight.

Form in balls and bake at 375°F for 5-7 minutes. Careful not to burn them! Chocolate is harder to evaluate if it is cooked or not. When in doubt allow to finish baking on the cookie sheet.
