Chocolate Pancakes

We all need a little comfort sometimes. Comfort = Chocolate. Right?!

All this quarantine business is tricky and a little tiring and some times you just need something extra special to start the day! These chocolate pancakes do the trick perfectly!

They are delicious with Nutella, Peanut butter, butter and powdered sugar or fresh fruit and whipped cream. They are chocolately, but not overly sweet. Perfect for a birthday breakfast or a lazy Sunday morning.

Ingredients:

  • 1 1/4 cups All purpose Flour
  • 1/4 cup cup Cocoa Powder
  • 4 teaspoons of Baking Powder
  • 2 tablespoons of Granulated Sugar
  • 1/2 teaspoon of Salt
  • 2 Eggs
  • 1 cup Buttermilk
  • 1/4 cup Sour Cream
  • 3 tablespoons melted Butter

Instructions:

Begin by measuring all of your dry ingredients into a bowl and whisking them well with a fork. I find it helpful to sift the cocoa powder, but it isn’t necessary to sift anything else.

Next measure all of your “wet” ingredients: eggs, butter, buttermilk and sour cream.

Then mix them together in a small bowl or directly in your measuring cup.

Whisk the wet ingredients well with a fork.

Add them to your dry ingredients and whisk well with a fork. Do not overmix.

Grease a frying pan or pancake griddle.

Pour your batter into your pan cooking them on medium-low. Flip your pancakes when they start to bubble and you can slide your spatula under the edges of your pancake. The second side will cook faster, so keep an eye on them!

When they are done pile up a giant stack and cover them with your favorite ingredients! We love Nutella, fresh fruit or Lindt Dark Chocolate spread on ours.
