Apple Blondies

Ingredients:

Cookies
  • 1/2 cup Butter
  • 2 Apples
  • 2 Eggs
  • 3/4 cup Brown sugar
  • 1 tsp Vanilla paste
  • 1 cup Flour
  • 1/2 tsp Baking soda
  • 1/8 tsp Baking powder
  • 1/2 tsp Salt
Strudel Topping
  • 1/2 cup Brown Sugar
  • 1 cup Flour
  • 4 tablespoons Butter

Instructions

Measure your wet ingredients: brown sugar, butter (room temperature), eggs and vanilla.

Beat your butter until creamy. Scrape the bowl. Add sugar. Beat 2 minutes. Scrape the bowl. Add eggs and vanilla. Beat another two minutes. Scrape the bowl.

Peel one apple. Dice your apple into small pieces.

Measure your dry ingredients in a a separate bowl: flour, salt, baking powder, and baking soda.

Add your apple bits to your dry ingredients and stir them in lightly.

Add the floured apple mixture to your wet ingredients and stir on low or stir in by hand just until blended.

Grease and flour an 8×8 pan.

Spread your batter flat across the pan.

Peel the second apple. Cut it into thin 1/2 inch slices. Sprinkle your apples with cinnamon sugar and stir.

Place the apples on top of your dough, pressing them lightly into the dough.

Make your streusel: 1/2 cup Flour, 4 tablespoons Butter and 1/4 cup brown sugar (you can add cinnamon for flavor!).

To make your streusel use cold butter chopped into small cubes. Add all your ingredients to your food processor and pulse until blended.

Spread your streusel on top of your bars evenly. I chilled my prepared bars in the refrigerator for an hour before baking.

Bake in the oven at 350°F for approximately 12-15 minutes.

Allow to cool before slicing.
