Chewy Chocolate Brownies

These Cocoa Powder Brownies are just like the box mix, but better!

When I first moved to Italy I had only ever eaten box mix brownies. Sad but true! I was really homesick and desperately wanted some brownies and hot chocolate. So I packed my suitcase full of boxed mixes and my family sent me care packages. It worked sort of. Except that I couldn’t eat a batch of brownies whenever I wanted to. So, I decided to find recipes to make my own brownies! My first, and favorite recipe was for these fudgy, cakey, heavenly brownies. But one of my kids loves the chewy-ness of a box mix brownie, and so here is my latest creation! They are perfectly chewy, just like a box mix.

To make these brownies, you will need:

  • 1 cup granulated sugar
  • 2 Tablespoons brown sugar
  • 4 tablespoons butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/3 cup vegetable oil
  • 3 Tablespoons Nutella
  • 3/4 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1 teaspoon cornstarch
  • 1/4 teaspoon salt
  • 1 cup dark chocolate mini chocolate chips

Mix your dry ingredients in a bowl and set aside. Measure 1/2 cup cocoa powder, 3/4 cup flour, 1/4 teaspoon baking soda, 1 teaspoon cornstarch, and 1/4 teaspoon of salt into a small bowl and whisk lightly with a fork until blended.

Next mix your wet ingredients together. Begin by melting your butter in an oven safe dish. Add your sugars to the mixture and whisk well with a small wire whisk or a fork, scrape sides of the bowl as needed. Add your 2 eggs to the mixture and whisk until blended. Add your vegetable oil to the mixture and whisk. Add your vanilla and whisk again. Lastly add your 3 tablespoons of Nutella and whisk well until all your ingredients are blended.

Add your wet ingredients to your dry ingredients and mix well.

Bake at 350°F for approximately 20 minutes! DO NOT OVER BAKE brownies! The toothpick should come out with wet crumbs all over it. Over baked brownies are dry. Allow to cool completely before cutting them.
