Red Velvet Cookies

Do you like Red Velvet? I didn’t really get the craze, until I found the perfect recipe…which I will try and post for you soon!! Now, I get it. It is so good. It is humid, not overly chocolatey, and has a slight tang or kick.

I thought it would be fun to turn my favorite red velvet cake recipe into cookies! And they turned out tasty. Especially when topped with these amazing Hershey’s White Chocolate Peppermint Kisses. You can find them at Target, Walmart or Amazon. They are the perfect touch to make these red cookies extra pretty for Christmas time!

You will need room temperature ingredients for this recipe. If you forgot to leave your ingredients out, no problem! Check out this post and this one to speed up the process!

Begin by blending your butter and sugars in a stand mixer. Mix for approximately 2 minutes or until it is blended. Add your red food coloring gel and blend for another 2 minutes until fluffy. Scrape your bowl. Add your egg and egg yolk and beat well.

In a separate bowl mix together your cocoa powder, flour and salt. Add your dry ingredients to the wet ingredients and blend on low just until combined.

In a separate little bowl measure your 1/2 tsp of baking soda. Pour in your 1/2 tsp of vinegar and as soon as it starts fizzing pour the mixture into your dough and stir it in. Lastly stir in your 1 tsp of mayonnaise.

Put the dough in the fridge to chill for approximately 1 hour.

Form balls and place on parchment paper or silicone mat. Bake at 375°F for approximately 5-7 minutes. While they are baking remove the wrappers from your kisses.

Remove cookies from the oven. Gently press the kiss down into the cookie while it is still warm. Be sure to press gently so that it doesn’t start to melt. Allow the cookies to cool and then transfer.

They are perfect on your cookie plate or with a peppermint mocha!
