Peanut butter Chocolate Sandwich Cookies

This easy chocolate-peanut butter treat is delicious and super quick! Just one warning: once you eat one, it’s hard to stop! They are soooo good! You only need 3 easy ingredients:

  • Ritz Cracker
  • Creamy Peanut Butter
  • Melted chocolate (dark or melt chocolate): I like to use a combination of milk and dark chocolate for my melting chocolate!

Begin by forming “sandwiches” with your crackers. Match up as many pairs of crackers as you would like to make cookies. Make sure that the crackers are not broken, as you will be able to see the broken part in the cookie.

Once you have stacked all your sandwiches, begin filling them with peanut butter. Smooth it out with a knife, bringing the peanut butter almost to the edge of the cookie. Fill all your sandwiches. Once they are all full then chill your cracker sandwiches, or freeze them for approximately 1 hour.

Melt your chocolate in a microwave safe dish on high at 30 second intervals. Make sure to stir after every interval. Do not overheat the chocolate as it can burn or seize. If it is mostly melted, use a spoon and stir vigorously to melt it the rest of the way!

Remove your peanut butter cracker sandwiches from the freezer. Dip them one at a time in your melting chocolate, taking care to tap off the excess chocolate.

Set them flat on wax paper to dry. The amount of time it takes for the chocolate to harden (dry) depends on the type of chocolate you use and the climate of your home.

If you would like to, before they are dry, you can add sprinkles or decorate them to look like cute reindeer. I always make some with Nutella as well for my non-peanut butter-loving daughter. So to differentiate which have peanut butter and which have Nutella, I love to use festive sprinkles to match the occasion.
