Most baked goods call for eggs to be at room temperature. But why?!
When at room temperature, eggs and other dairy ingredients form an emulsion which traps air. While baking in the oven, that trapped air expands and produces a fluffy baked good.
If your eggs are straight out of the fridge and you need to bake right away, then this is the solution for you! Just place your eggs in a dish, bowl or cup of warm water (NOT hot, you do not want to cook them). Let them soak for 10 minutes and voila! You have room temperature eggs, ready to make your baked good fluffy and delicious!
